Purple Red Cabbage & Blueberry Drink

Ingredients

  • ½ small red cabbage, chopped
  • 1 cup fresh or frozen blueberries
  • 4 cups (1 liter) water
  • Juice of 1 lemon
  • 2–3 tablespoons honey (or sugar, to taste)
  • Ice cubes (optional)
  • Fresh mint and lemon slices for garnish (optional)

Instructions

  1. Add the chopped red cabbage, blueberries, and water to a pot.
  2. Bring to a boil, then reduce the heat and simmer for 20–25 minutes.
  3. Remove from the heat and let it cool slightly.
  4. Strain the liquid through a fine sieve, pressing the fruit and cabbage to extract as much juice as possible.
  5. Stir in the lemon juice and honey until dissolved.
  6. Chill in the refrigerator for at least 2 hours.
  7. Serve over ice and garnish with mint and lemon slices if desired.

Notes

  • The lemon juice helps turn the drink a brighter purple due to the natural pigments in the red cabbage.
  • Store in the refrigerator for up to 4–5 days in a sealed bottle.
  • You can use sparkling water instead of some of the water for a fizzy version.
