Chocolate-Covered Nut Crunch Bars

Ingredients:

  • 1 cup mixed nuts (almonds, hazelnuts, or peanuts – chopped)
  • 1 cup puffed rice or crushed cornflakes
  • 3 tbsp honey or maple syrup
  • 2 tbsp butter (or coconut oil)
  • 100 g milk or dark chocolate (for the nut mixture)
  • 200 g dark chocolate (for coating)
  • Pinch of salt
  • 1 tsp vanilla extract (optional)

Instructions:

  1. Toast the nuts (optional):
    • In a dry pan, toast the chopped nuts over medium heat for about 3–4 minutes until fragrant. Set aside.
  2. Prepare the base mixture:
    • In a saucepan, melt 2 tbsp butter, honey, and 100 g of chocolate together over low heat. Stir until smooth.
    • Add the chopped nuts, puffed rice (or cornflakes), vanilla, and a pinch of salt. Mix well until everything is evenly coated.
  3. Shape the bars:
    • Line a baking tray with parchment paper.
    • Pour the mixture onto it and flatten evenly (about 1.5 cm thick).
    • Let it cool for 15–20 minutes, then cut into rectangles or squares.
  4. Coat with chocolate:
    • Melt the remaining 200 g dark chocolate.
    • Dip each bar into the melted chocolate, ensuring full coverage.
    • Place on parchment paper and refrigerate for 30–40 minutes until the coating hardens.
